Vegetable burgers

We have been trying to eat less meat and more vegetables at home. And, I was really craving burgers...so I started looking around internet for some recipes and I didn´t quite find what I was looking for...so I decided to make a recipe up. Here they are!!! They are a little messy to make but they are worth it! So, give them a try!!

You need:
Half an onion, three or four garlic gloves (we love garlic), a big carrot, half zucchini, spinach or chard, half a small cauliflower, parsley, salt, garlic powder, bread crumbs, two or three eggs, flour and olive oil.

Preparation:
First, you need a sauté pan with a little of olive oil where you will sauté your onion and garlic. (I usually cut mine in very tiny pieces) Once, you see the onion has a see through kind of texture, you can add the carrot and zucchini cut into little pieces. Sauté well, until the vegetables are almost done, then, add your spinach and/or chard. This will only take a few minutes to get done. Remove from your stove and set aside. Bring some water to boil in a pan and cook your cauliflower. Once, it is cooked, remove all the water. Cut the cauliflower in small pieces and add to the rest of the veggies. Add salt, parsley and some garlic powder. Let them cool off for a little bit. When you are ready to make the burgers, beat an egg and add to the vegetables. Mix well and add some bread crumbs. This will help you handle the burger mix a little better. Now, you are ready to roll. You will need three plates, one for bread crumbs, another for the flour and a third one for your eggs (two beaten eggs). You also need a frying pan with some olive oil. Make some round balls and then flatten a little, cover them with the crumbs, the flour and the beaten egg. When the oil is warm enough, start frying them until they are golden brown.
